You can use it as a quick snack, or even as a whole meal, depending on how hungry you are. All you’ll need is a can of lentils, some cherry tomatoes, white wine vinegar, chives, and some salt. Slice the tomatoes and the chives put them together in a bowl with the lentils and season everything to taste.

Then oil it up and put it over the grill for about 15 minutes. After it’s done, wait for it to cool so you can remove the kernels. Add that to a bowl filled with chopped red onion, crumbled feta and pour some olive oil over everything. Then add some fresh herbs like parsley or mint, season it and dig in.

2 Fruity Cheese Salad
For this salad, you’ll need to cut up a few tomatoes and peaches. Before you start talking about the tomato being a vegetable, you should know by now that it’s actually a fruit. But it probably wouldn’t work as a smoothie. Then boil some balsamic vinegar to get a balsamic reduction. After chopping the fruits, put them on a plate and sprinkle some burrata cheese. Finally, add some fresh chopped basil and pour the balsamic reduction over everything. If you don’t want burrata, you can just use mozzarella.
1 Green Pasta Salad
Cook up some pasta, and when you’re done, add some olive oil so it doesn’t stick. In the meantime, heat a bit of that oil in a skillet, where you’ll add green beans and garlic cloves that you’re going to quickly saute. Toss all of that with the pasta and put it in the fridge to chill. Once it’s cool, add some spinach, some basil and olive oil spread, some parmesan, and a bit of salt. If you want to make it even more delicious, feel free to add things like tomatoes, bacon or even chickpeas.
