A new, fast casual restaurant seeks to bring authentic, Peruvian-inspired rotisserie chicken to the next level.

Viva Chicken made Delaware its first and only northeast location when the restaurant officially opened its doors on Wednesday, July 11, 2018.

Co-owner Bruno Macchiavello, who’s originally from Peru and has been cooking for about 30 years, came up with the idea to open up a chicken chain after he started crafting his family recipes and sharing them with others.

After receiving loads of positive feedback, he and co-owner Randy Garcia decided to introduce their recipies to the world on a larger scale.

“The secret is the love that we make the Viva Chicken with,” said Macchiavello. “The flavors are completely different than anything you can have here or anywhere else.”

The chicken is marinated in the family recipe of exotic herbs and spices for a minimum of 24 hours. Than it is slow cooked in a charcoal-fired oven that was imported from Lima, Peru.

“It’s better than any other of the chicken chains that I know,” said Hellen Horoshak, a Newark native who is a huge fan of Viva Chicken. “I got avocado stuffed with quinoa and the chicken [on top], and it is out of this world. I will get it every time that I come here.”

The dine-in or take-out restaurant provides a variety of organic, healthy options, for all, from food offerings to daily hand-made juices, including:

  • Herbal Limeade, made with lime, basil, rosemary, and mint
  • Maracuya Passion Fruit juice
  • Chicha Morada made with Peruvian purple corn, cinnamon, cloves, pineapple, apple and limes

Mary Therorx is originally from India and knows a good flavorful dish when she tastes one.

“I say you got to give [Viva Chicken] a shot. You’re going to love it,” said Therorx. “Glad to find a real good chicken place that has some spice to it.”

Derrick and Shanice Hall both attended the soft opening on Sunday and didn’t waste time coming back for the official opening Wednesday.  They agreed that the service was fast and friendly, and the food is a delicious, yet healthy choice.

“I don’t feel sleepy after eating this. This feels healthy and very refreshing and energizing,” said Derrick Hall. “It’s fantastic.”

Other than the First State’s location, Viva Chicken has eight locations in North Carolina, and one location in Utah.

Viva Chicken is located in the Centre Pointe Plaza at 1103 Churchmans Road in Christiana.
